I love going to the farmers market to purchase fresh picked produce. I recently went and bought some green and yellow beans among other things. That night for dinner I created a new green bean recipe that turned out delicious, maybe not the most healthy, but really really good if I do say so myself. Here’s what I did, I fried up some organic bacon in a sauce pan; while doing that I blanched my green beans for about 5 minutes. When the bacon was done I removed it from the pan and added fresh minced garlic and diced spring onions. After those simmered a few minutes I added crushed almonds and Dijon mustard. I mixed those things together and simmered for a few more minutes then I added the blanched green beans mixing them thoroughly with the other ingredients, covered the pan and let them simmer a few minutes more and wham they were done and amazingly good.
To use up the bacon I pan fried some slightly stale french bread in my cast iron skillet I then topped each piece with a light herb creamed cheese spread and a piece of bacon – so good. Till next time craft and cook on!
