Was back at the farmers market in Red Wing last Saturday and found a good deal on some great tomatoes so decided to try my hand a making/canning home made spaghetti sauce. It was a lot of work – well sort of. I should say it took a lot of time because it took about 5 hours for the sauce to reduce and thicken. Overall the process was fairly easy. First you blanch and peal 25lbs of fresh picked tomatoes, core and seed them as best as possible, place them in a large stock pot add your fresh spices, bring to boil and then simmer till the sauce reduces. Once again I have to say the end product was/is fantastic – some of the best sauce I have ever had! If you’d like to try some it is $6 a pint – I put it in pint jars so just the right amount for two people.
